He completely lost me when he criticized the type of Christmas cookie cutters my grandmother, my mother, and I found perfectly satisfactory.

Technology marches on.
As for his "anal" preparation techniques, he usually points out which steps you can skip, and why you wouldn't want to. That said, I agree that some of his stuff can be overly elaborate. But usually, it pays off in the end, and it's better to know all the tricks and not use them than to not know them at all.
My favorite meal I learned from his show is also one of the simplest; cornish game hen with bacon and pearl onions. Try it sometime; it's delicious and easy.

I went down to our local mall when he was on a book tour ("I'm Just Here for the Food", LOVE AB by the way) and he was doing a little talk...then signing books...then giving another little spiel...then signing books, etc. So he goes off to sign books, take pix, etc. and I head back and see that the line goes out to the parking lot and around the corner. "Screw that."
So I head back and listen to the next guy, Alton comes back and my wife says, "give me your book, I'll go get in line cause everyone will be coming back here."
"Awesome."
She shows up about 40 seconds later..."no one got out of line."
"Damn."
So Alton goes back, signs some more stuff, line still goes around the corner. He comes back for his third "set" and says, "so, I know there are a lot of people who want to get their book signed or get a picture taken or whatever. I just want to let you all know not to worry, but this is my last presentation, and then I will be here as long as it takes. For anyone that wants to have their booked signed or get a picture or ask a question, I'll stay as long as it takes after the show, until everyone who wants gets a shot."
All kinds of awesome right there. AB is the freaking man. (He's also much bawdier in person. Some of his stuff was definitely PG-13 and above.)

The Meatloaf and Brined Turkey are his crowning achievements in my book. I now have the dubious honor of cooking the Thanksgiving Turkey every year. Yay?
