As far as ease of install goes - stay away from the HP mini 1000. Go for the MSI u120 or Dell Mini 9. On the Dell, and I can't stress this enough, the HD needs to be bigger than 8GB!
That HP Mini listed on Best Buy is the 8.9" version with the bezel around the screen. The 10.2" version is much nicer looking as it has the edge-to-edge "glass" though that also makes it a little too glossy.
That's what I have, and I have to say that I am perfectly content running Windows 7 on it. I'm not a serious mac-head though.

@TheSonOfKrypton: Half the fun is playing around with the thing and saying "look what I did." And I don't know, maybe the fact that it costs about $1700 less is a PRRREEEEETTTTYYYY big reason not to just go and get a Macbook Pro.

@imTheKing: As has been said, I own a white Macbook (Granted it doesn't get used), it's not about Apple hate it's the fact that your comments are so dripping with unneeded fanboy-ism it doesn't add to the conversation. Last I checked Dell is still offering the Mini 9 into day 6.
The thing rocks, and with two the odds are I'll keep one on the road for a good long time.
