you either have another eunuch, Mac Mini that gave up the fire power of a firewire port in favor of only the MiniDisplay Port, or a balls-out (yet most likely useless-to-the-public) Blind-lack-of-a-display-port Mac Mini Server with FW800 support.
The choice is yours.

I'm one of the few people who actually has a Mac Mini, and I know Apple will drop the ball on upgrading what could possibly be the best micro-form computer in the industry. Here's what the Mac Mini needs, and most likely won't have...
Larger RAM, 4GB would be nifty.
More Firewire ports, I prefer connecting an external HD via Firewire over USB 2.0.
HDMI, this is what turns a lot of people off from using the Mac Mini for a HTPC. They could have iPod market share for HTPC if they pulled their over-inflated heads out of their precious asses, and gave people an easy and convenient means of connectivity.
A better formed keyboard/track pad combo. I use both a Mac Mini, and I also have the Sony hockey puck (too lazy to look up the model number). I can't say I love the Sony's keyboard, but at least I didn't have to pay $129 like I did for the Logitech diVono Edge.
I'm sure there are more, but those are my main gripes about the Mac Mini. Which I know Apple will never address, because they gave up on practicality and being functional years ago. It's the main reason why I primarily use PC now.

Most firewire ports are daisy-chainable. The only exceptions I've come across are a couple of FW800 devices that are on the lower end of the spectrum.
The keyboard/mouse you use wasn't supplied by apple so how is that your gripe? The whole point of the Mini is that you bring your own keyboard/mouse to the game.
Pretty much it needs a CPU bump, bus speed bump, memory bump, and preferably Blu-ray as a drive option. Which would then make it a modern multimedia interface platform. Enable USB HDTV dongles to interface directly with Front Row and act as a DVR then you would have a true integrated media platform in small form factor.
Currently I like the Dell version better AND Blu-ray is an option.
