I have a friend that has been doing this for quite a while. He pays for the hobby with still photos of high end real estate, but mostly he's just into tinkering around. He started with the 5DmkII, and now also uses a T2i and a 7D.
In fact, he uses the VR goggles that @adhir jokingly recommended in a comment below. Two people (he and his wife) fly the copter. They both wear the VR goggles (which look more like sunglasses). One is using a low-res video feed to steer the helicopter, the other is using a separate feed to aim the camera using on-board servos, focus, zoom, and so on. They'll stand together, both looking through their glasses up at the copter with one eye, and at the same time watch the video feed being pumped wirelessly to the other eye.
It's really freaking cool to watch, and they get some amazing footage.
