This is how you actually break open a giant Italian cheese

I'm just posting this for two reasons. Because I find it fascinating from beginning to end—I just couldn't stop watching him prepping the cheese wheel to break it open—and because I just discovered there's a thing called Channel Cheese TV on YouTube. An entire channel about cheese! I'm doomed.

This channel is going to suck my eyeballs for the next two or three days.

Trentino cheese is a type of Grana cheese, like Parmigianino-Reggiano, Grana Padano, Granone Lodigiano, Trentingrana, and Gransardo.

THIS IS NOT HOW YOU CUT THIS CHEESE IF YOU WANT TO SELL IT. You score the rind, cut into the top sides with a knife, then use a wire cutter to cut it in half, repeat for quarters, than use a wire cutter for the rest. By cutting it with a knife, you risk breaking the pieces into unsellable portions. (5 years of cheesemongering)
