Linzer Cookies

Ingredients:

1 cup unsalted butter, softened

1 cup powdered sugar, sifted

2 large egg yolks

½ tsp salt

½ tsp cinnamon

1 tsp vanilla extract

2 tbsp freshly squeezed lemon juice

2 ½ cups all-purpose flour

1 cup almond flour

½ cup apricot or strawberry jam

Optional powdered sugar for decoration

Recipe:

Mix butter until creamy then mix in sugar before stirring in the egg yolks

Add salt, cinnamon, vanilla extract, and lemon juice and mix together

Stir in flour and almond flour

Divide dough in half and shape into one-inch thick disks

Chill for one hour to two days

Preheat oven to 350 degrees F

Roll out each disc and cut out cookies in shape desired

Bake one sheet of discs at a time for 9-10 minutes and cool for five minutes

Fill cooled cookies with jam by spreading on the bottom of one and placing another on top

Sprinkle with sugar
