Sean Brock is one of the hosts of the highly recommended PBS's TV show The Mind of a Chef and the executive chef at Husk, in Charleston, South Carolina. His cheeseburgers are legendary. I'm down with the ground bacon too, cool idea (and I've never tried flank steak either for this). I hope it was just the editing, but he was bugging me with the handling of the raw meat and then the uncooked stuff. Especially flipping the burger, then moving the buns around. Maybe it's no big deal (I don't have a formal food education) but it bugs me.
