Kolaczki Cookies (otherwise known as Polish Christmas Cookies)

Ingredients:

1 cup unsalted butter – softened and at room temperature

8 oz. Full Fat Cream Cheese – softened

1/4 tsp vanilla extract – other extracts can be used if you prefer

1/2 tsp kosher salt

2 1/4 cups all-purpose flour

Jam – Raspberry or flavor of your choice

Powdered Sugar

Instructions:

Mix butter and cream cheese in a large bowl until light and fluffy then stir in vanilla extract and salt

Slowly add flour until the dough is thick and has a sticky texture

Transfer the dough to parchment paper and flatten until it is 1/2 inch thick

Chill in the refrigerator for 45 minutes

Dust your work surface with liberal amounts of powdered sugar and cut the dough into four equal sections and dust each with more powdered sugar

Roll each piece until they’re 1/4 inch thick and cut into 2×2 inch squares

Spread 1 tsp of filling in the center of each square from one corner to another

Dab water on one of the corners without the filling and seal with the other corner

Baked for 14-18 minutes at 350 degrees F until they’re slightly golden brown

Cool and enjoy!
