Mexican Wedding Cookies – Commonly served at Christmas time
1 cup butter, softened
1⁄2 cup powdered sugar
1 teaspoon vanilla
2 1⁄4 cups sifted flour
1⁄4 teaspoon salt
3⁄4 cup chopped walnuts or 3/4 cup pecans
powdered sugar (for rolling baked cookies in)
Recipe:
Preheat oven to 400 degrees F
Mix butter and powdered sugar until light and fluffy, then stir in vanilla
Whisk in flour and salt, gradually add butter, and stir in chopped nuts
Form dough into 1 1/4-inch balls
Bake for 10-12 minutes or until cookies turn light golden brown
