Netflix: Obviously the main reason you need to download Netflix is because you need to review your favorite episodes of Arrested Development before the fourth season drops there in early 2013. Plus, you're going to need something to keep you sane while riding out Hurricane Sandy. Free

Hulu: Modern Family, Parks and Rec, 30 Rock, et al—obviously you need to download Hulu. Because you have to catch up on your favorite shows somehow. Free

Skype: Whether you're calling your old college buddy in Korea or you're video chatting with your mother across town, Skype is a good one to have. Plus, it's integrated across the entire operating system, so it's one of the essential RT titles. Free

Firefox: We've been over this—your grandma uses Internet Explorer. So you probably want an alternative browser. Firefox released the preview version of its browser at the beginning of October, and its been updating nightly since then, so Mozilla has already been improving on it for nearly a month and will continue to do so. Free

The Hulu app is actually for HuluPlus, which costs $7.99/mo. Not Free.

If you want to access the free Hulu content, you'll have to use the web browser or install the old Hulu Desktop application (Windows 8 only, since it can't be installed on RT).

The Netflix app is not really free either, as you still need to pay $7.99/mo. for a streaming subscription. On the plus side it does not require an XBOX Live Gold paid account to use.
